Acetaia Bellei‘s Balsamic Vinegar of Modena P.G.I. “Dulcagrum” Bio, aged in oak barrels, is characterised by a perfect balance between sour and sweet,
by a strong, enveloping flavour that enhances the taste of every dish.

Bellei Dulcagrum Bio contains no gluten, lactose, fat or caramel.
Excellent with salads, fresh, cooked or grilled vegetables.

Balsamic vinegar is a product of excellence, albeit a very simple one. However, it must comply with a production process that follows very strict rules.
Mr Luigi, owner of the Bellei family business, passes on his skills to his grandchildren through words, silences and gestures.
By observing the vines. Listening to the wind and rain beating on the bunches of grapes. Feeling the warmth of the sun as it warms them, until realising when they are ready.

After the harvesting of the “precious pearls”, as the grapes are called on the farm, the pressing in the wine vats begins. Then the must is formed, which is then simmered until its volume is reduced by about half. At that point, the precious liquid is transferred into fine wooden barrels.
The must is then transferred to a smaller barrel where it remains to be refined.
It then reduces, thickens, takes on the notes of wood and takes on the characteristics that distinguish Acetaia Bellei throughout the world.
