Bellei‘s Balsamic Vinegar of Modena P.G.I. “Silver” is aged 5 years in oak barrels.
This process rounds off the typical acid notes of the vinegar and gives it an underlying sweetness.
The notes of wood and fruit are well perceived and its density allows a longer stay on the palate.

Due to its delicacy, it is perfect for enhancing the flavour of fish, meat and soups.
In particular, Bellei Silver Balsamic Vinegar goes well with barley soup, prawns, fresh tuna, risotto and boiled meat.

Balsamic vinegar is a product of excellence, albeit a very simple one. However, it must comply with a production process that is faithful to very strict rules.
Mr Luigi, owner of the Bellei brand, passes on his skills to his grandchildren through words, silences and gestures.
By observing the vines. Listening to the wind and rain beating on the bunches of grapes. Feeling the warmth of the sun as it warms them, until realising when they are ready.

After the harvesting of the ‘precious pearls’, as the grapes are called on the farm, the pressing in the wine vats begins. Then the must is formed, which is then simmered until its volume is reduced by about half. At that point, the precious liquid is transferred into fine wooden barrels.
