Discover the Easter Colomba: a typical long-rising cake
which is somewhat reminiscent of Christmas panettone, but with the added bonus of an outer icing enriched with whole almonds.
This cake is given as a gift and eaten at the end of lunch on Easter Day and is shared by all Italian regions from north to south.

Excellent ingredients such as ginger and lime are combined with the sweetness of white chocolate in the dough and make this cake unique.
The ginger fillets are candied, in the tradition of Agrimontana, with a sweet syrup of water and sugar, without artificial colouring or flavouring,
to maintain the natural freshness and distinct aromaticity of the ginger.
Topping it all off is a hazelnut glaze, lots of whole almonds and grains of sugar.
In the dough, only fresh eggs from chickens raised in the air, natural sourdough, and white chocolate drops directly melted into the dough.

The Colomba (dove) is a symbol of peace and spring, which is why it was chosen many years ago in Italy
as the shape for a cake to represent the beautiful season and religious festivities.
