Description
Giovanni Rana‘s fresh Orecchiettine, from the “Regional Specialties” series, are inspired by a typical Apulian pasta format: the Orecchiette, which resembles the shape of small ears.
Getting lost in the alleys of Puglia, we still discover old ladies who prepare them by hand, on large floured wooden boards. The scent is intoxicating.
Giovanni Rana’s Orecchiettine are really surprising, fragrant and fresh, produced with 100% wheat from the Tavoliere delle Puglie, thin in the center and thicker at the edges as tradition dictates.
One of the recipes that made them most famous is “Orecchiette with cime di rapa”, in which anchovies, garlic and chilli are added in addition to the typical Apulian vegetables.
Also ideal to prepare with meat sauce, tomato, basil and buffalo mozzarella to be au gratin in the oven or with vegetables and crumbled sausage.
