In the history of pasta, a particular shape has gained great popularity over time: Paccheri, a classic pasta format used in Neapolitan cuisine.
They can be smooth or ridged, just like the artisanal Paccheri by ItalianaVera, made using the bronze trafile technique.

Originally, they were considered the “pasta of the poor” due to their generous size: a small quantity was enough to fill the plate and satisfy the eyes (but certainly not the appetite)!

There is an interesting story behind the name “Paccheri.” This term derives from Greek and is a combination of “pas,” which means “all,” and “keir,” which translates to “hand.”
Therefore, the literal meaning would be “the whole hand,” just like an open-handed slap.

But what do slaps have to do with Paccheri?
When poured into the plate, especially in the past when they were accompanied by liquid sauces, Paccheri produce the characteristic sound of a slap given with the whole open hand,
like those friendly and playful slaps. In fact, in Naples, they were also formerly called “Schiaffoni.”

Tasty ideas?

Pair them with rich and succulent sauces based on meat or fish. They are also delicious when stuffed (as with cannelloni) and baked au gratin.
The key is to position them vertically. Before baking, sprinkle them with grated cheese of your choice or mozzarella for a stringy effect.
