Saracene biscuits are so called because they are made with wholemeal buckwheat flour ((called Saracen wheat in Latin languages) to which dark chocolate chips, brown sugar and fresh, high-quality Italian milk are added.

It was cultivated in Asia many centuries ago, then exported to the Middle East and from there to Italy via the “Saracen” people (from the Arabian peninsula).
In Italy it is used when one wants to add an ancient and intense flavour to pastry preparations, pasta or bread.
